Mexican Tater Tot Casserole

Hi! Tonight I did not plan for dinner ahead of time, which led me to look in the freezer and pantry and make something up! I saw the hamburger meat and tater tots and thought, tater tot casserole. I had no velveeta and we just had green beans last night....so....I went with the concept and ran with it. Here is what I used:

1lb ground beef
1 pkg taco seasoning
2 cans cream of mushroom
1/2 cup sour cream
1 can fiesta cheese
1/2 cup grated cheese
Tater tots

I browned meat and drained.
Next I added seasoning, sour cream, soups, and nacho cheese to the meat and heated through.
I then poured in casserole dish, topped with tater tots then sprinkled cheese on top.
I baked this on 425 for 20 mins.

**this turned out great but I think I will add a can of corn and a can of black beans to this next time!

Seafood Alfredo

Tonight I made Seafood Alfredo, yum! This recipe fed four adults and we had a lot left over!

Here is what I use:

Minced Garlic
Sliced Mushrooms
Immitation Crab Meat
Shrimp
Alfredo Sauce
Pasta Noodles

This is VERY easy!

I started by getting everying prepped. I make things easy on myself.
I bought peeled and devained shrimp, and minced garlic in a jar.
 
Next I get the noodles going. I use a Pasta Boat.
I have made this with all kinds of different pasta, tonignt I used bowtie.
 
While the noodles are cooking, I heat a pan and saute the garlic and mushrooms.
 We love mushrooms so I use an entire small container.
We also like garlic I use about 2tbs.
I cook this in a large pan then use the pan to serve out of, less dishes to clean!!
 
Once the garlic begins to darken, I add the meat in.
The immitation crab and the shrimp are both precooked so
it does not take long to heat through.
Once warm, it should only take approx. 5 mins, I added two jars of Alfredo Sauce.
(You can make a smaller amount using less pasta and 1 jar of sauce.)
 
This just needs to heat through. The noodles cook in the pasta boat for approx. 25 mins, so they finished right as this was all heating through.
I just add the noodles to the pan and stir.
 
Finished!!

Chicken Enchiladas with Sour Cream Sauce

Hi! So I have been wanting enchiladas but did not want to go out to eat, so I decided to make my own. I make chicken enchilada casserole all the time, so I thought how hard can this be?! 

I love my crockpot so I cooked the chicken all day while I was at work, this made things very easy!

Here is what I used:

4 chicken breast tenderloins
1 can cream of mushroom
1 can cream of chicken
1/2 cup monterey jack cheese
1/2 cup pepper jack cheese
1 cup salsa
1 cup sour cream
1 tbs fajita seasoning
1/2 onion
corn tortillas
flour tortillas (my husband will not eat corn tortillias)
1 cup chicken broth OR chicken bullion
green chillis
cilantro

First start layering in the crockpot!

 
 
 
This is the seasoning I used, we love it! Got it at a mexican meat market!
 
 
I worked a full day yesterday, so this cooked for 8 hours.
Let me tell you, when I got home, this house smelled AMAZING!
Next I added the cheese, onions, and cilantro to taste.
 
 
Once I added the onion and cheese, I let heat on warm for 15 mins.
Next I began to fill the tortilas and roll into a casserole dish.
I used both corn and flour, but that is because Jon will not eat corn tortillas.
 
Now onto the sauce! I will say that this was very difficult to get pics of!
This cooked and thickened very fast!
 
First I melted 2 tbs of butter in a skillet.
Next I added 2 tbs flour and let simmer together.
Next I added 1cup water with 1 bullion cube dissolved.
 (I was out of chicken broth)
I used a wisk and smooth the mixture.
This thickened VERY quickly.
 
Once it thickened, I added the green chillis and 1 cup sour cream
 
 
Once this thickened and mixed together, I poured over the tortillas.
Then I topped with 1/2 cup grated pepperjack cheese and cilantro for color.
 
I cooked this in the oven on 425 for 15-20mins.
 
The last part was my FAVORITE!
